I have a confession. I love baba ganouj (or ganoush) from the Wegmans Mediterranean bar. But I know it’s full of crap (including GMO canola oil and calcium disodium EDTA). So I set out to make it myself… and, if I may say so, this is pretty dang good. The texture is a bit different as I leave the nutritious skins on my eggplants (and no, they don’t taste bitter), but I actually like it a bit better. And it doesn’t have that unnatural tang…
Baba Ganoush
*1 medium eggplant
*2-3 Tbsp. extra virgin olive oil, plus more for roasting
*1/4 cup homemade mayo (or more to taste)
*4 garlic cloves
*1/2 cup (not packed) freshly grated raw Parmesan (This is optional, but it’s what makes it taste more like the Wegmans version.)
*3 Tbsp. fresh lemon juice
*Sea salt
Preheat oven to 375 degrees. Meanwhile, wash and dice eggplant into 1″ cubes.
Toss cubes in a roasting pan or on a baking sheet with oil. Sprinkle with sea salt.
Peel garlic cloves. Wrap in a small piece of aluminum foil and drizzle with oil. Close the cloves up in the foil and place on roasting pan with eggplant chunks. Roast until eggplant is soft (about 20 minutes), tossing once.
Add both the eggplant and the roasted cloves to the bowl of a food processor and gently puree.
Add in mayonnaise and blend. Add in cheese and then blend and taste, adding in sea salt to taste. (You’ll probably want to scrape down the sides, too.) Add in extra virgin olive oil, and then add the lemon juice a tablespoon at a time until desired zippiness is reached. Blend to desired consistency. (The Wegmans version is quite thin. Thin with filtered water if you’d like.)
Serve with toasted whole grain pita chips, organic tortilla chips or fresh veggies. Or, serve with a lamb dinner (or other meat) or as an amazing sandwich spread.
Oh, and if adding mayonnaise instead of tahini to baba ganouj makes you feel non-traditional, don’t worry: They do this in Israel, too!
