…Whatcha got cookin’?

I thought I’d share a couple of things that have been cookin’ over at our house lately. Of course, it takes more time to write out my own recipes, so today I’ll just share some things I’ve borrowed from others, with comments, of course. :) Enjoy!

Dee-li-cious Breakfast

Apple Omelets from Mr. Breakfast are sooooo yummy, if a bit time-consuming because you make them one at a time. But they make a great Saturday morning breakfast (and your kids will probably split one – they are filling!). Keep the peels on your apples, remember to use farm-fresh eggs, organic/ pastured/ raw cream,  sour cream and butter, and sub organic sucanat for the brown sugar. It’s like having an apple pie for breakfast.

Our New Go-To Lunch

I just LOVE this recipe for Coconut Flour Mini Pizzas from Food Renegade. Quick, easy, healthy, uber kid-friendly and no utensils needed! Woo-hoo! (It’s the little things…) We always have some kind of tomato product around, whether it’s sauce, chopped tomatoes, fresh tomatoes, or even salsa – anything would work. Alternatively, make (or buy) organic tomato sauce and freeze it in ice cube trays (transfer to a freezer bag when solid). You don’t need much for this recipe, a cube or two will do, and they will thaw quickly.

(I haven’t used the ‘pizza crusts’ as breakfast pancakes as suggested in the recipe. If you try that, let me know how they go over. I think they’d need quite a bit of butter and syrup…)

Recent Dinners

Yakisoba, from Kelly the Kitchen Kop. Easy and delicious. I took Kelly’s advice (written after the recipe) to double to sauce. However, it ended up a little too salty (even for me) so in the future, I’ll watch the soy sauce amounts, and definitely not add more than 1/4 cup when adding the veggies in. (I’m sure this would be delicious with shrimp, too!)

Chicken Curry, from Maria’s Country Kitchen. I make a few different curries, but none tomato based like this one. It’s a nice change, and very easy. I used red pepper because I just like them better, and instead of basmati rice, I served it over cauli-rice – my new obsession. Remember to use pastured butter and sprouted flour. And if you’re in the market for a truly delicious curry powder, try this one from Sharkawi Farm. I feel blessed to have them at our local farmers’ market; their spices and teas are amazing (and they are great people)!
