Aren’t you always looking for great meal ideas? Here are some completely delicious recipes I’ve played around with lately. With the modifications below (if necessary) they are healthy, grain-free, dairy-free and Paleo. What more could you want?
Hungarian Chicken
Find the original recipe here. I simply omitted the milk, subbed homemade almond flour for the wheat flour, and used ghee in place of the butter. (Any tasty fat, such as coconut oil or extra virgin olive oil, could be substituted if you don’t use ghee.) Very good, and smells dreamy!
Mexican Chicken Stew Over Cilantro Lime “Rice”
This super-easy crockpot meal can be found here. I used skinless thighs instead of breasts because they are my preference (and they are cheaper). The next time I make this I think I will double the amount of chicken. It probably won’t be necessary to double the rest of the crockpot ingredients (except, of course, the garlic because WHY NOT?). When I made this I doubled the cauliflower, and was glad I did. So next time, when I double the chicken, I will triple the cauliflower. Make sense? And if I may offer further advice… Don’t be shy with the cilantro. And don’t go crazy with the lime.
Ginger Vinaigrette (and a Salmon Recipe to Use It)
OH, if ever I wished a recipe was an original of mine, it is this one. I just love this ginger vinaigrette. And so does every last member of the family – including the teenager! I think he ate four plates of salad at this meal. It is now one of my staple salad dressings. If you scroll down past the vinaigrette recipe, there is a very simple and tasty salmon recipe using it. You can easily substitute whatever veggies you have on hand. It even tasted great with very little marinating time. Just make sure you serve it with a big green salad tossed in that yummy dressing! (See this post for a tip on using fresh ginger.)
Cilantro Carrot Fries
This easy side dish could have been better if I had given them time to crisp a bit; as usual, I was rushing. But they were very tasty – no leftovers. You can find the recipe here. The jalapeno can easily be omitted. These would make a yummy appetizer, as well!
Pumpkin Spice Chicken Cacciatore
Maybe better suited for the fall, but we really enjoyed this recipe anyway. It did remind me that I need to get myself a nice dutch oven… but my large stockpot worked well enough. I was a little lazy about roasting the green and serrano peppers; I just diced them up, tossed them with extra virgin olive oil and popped them in the toaster oven for a bit. That was probably unnecessary. The only other note I’d add is that we ended up with a LOT more sauce than we needed. That’s not too bad, because we like the sauce, and can use it in another meal or freeze it. Oh, and I definitely needed to add salt to this. Serve over cooked spaghetti squash (to which we also add ghee and salt). Mmmm.
Paleo Carrot Cake Balls
A delicious snack to have on hand. The little one particularly loved these. The recipe is here, but remember to use soaked/ dehydrated almonds to neutralize the anti-nutrients, ok? (You can use the directions for peanuts found here if you’ve never done it before.) I’m also looking forward to trying this version…
