I’ve decided to share one more recipe. This is the one that absolutely blew me away. All I can say is: Try it. You won’t believe how good it is.
White Bean Vanilla Cake
*3 cups white beans
, cooked and plain
*6 Tbsp. coconut oil
*3/4 cup raw honey
*6 eggs
*2 Tbsp. vanilla
*3/4 tsp. sea saltThis recipe could NOT be simpler. Basically, throw everything into the blender, whirl it together and dump it into a 7″ cake pan. Bake at 350 degrees for 30-35 minutes. Done.
This makes an incredibly moist cake. I have more often made this into cupcakes (I actually call them “muffins” so I feel better about serving them with breakfast
). The cupcakes might stick a bit, so if it’s for an important occasion, like a birthday, you may want to use non-toxic cupcake papers
.
Kate’s cookbook includes a chocolate variation, and she also suggests filling the cake with custard (recipe included – SO good!) and seasonal fruit, which would make it absolutely to die for.
One quick note: It’s important to first soak your beans to reduce the phytic acid. We’ll cover this in greater detail as we continue discussing anti-nutrients. After soaking, you can just cook them on the stovetop, or in the crockpot, until soft. To end up with three cups of beans, you’d generally start with soaking about 3-3/4 cups. (By the way, I used great northern beans. I suppose you could also use navy
or cannellini
.)
