Recipe for Cashew Cream
(And a Note About Why
You’d Want Such a Thing)

I know I’ve given vegans a hard time. And I will continue to, in one sense, because I truly don’t believe that is a healthy way for a human to eat. My own dear sister is a vegetarian, and I hope to change her mind. (Hi, Val!)

But I’ll tell you one thing about vegans: They can make just about anything out of nuts! And this has been a life-saver for me as we’ve been navigating the Gluten-and-Dairy-Free waters for my little one.

This cashew cream is the combination of a few recipes I’ve found on vegan websites. I think it is intended to be a substitution for cream cheese. It may need a little tweaking for that… but it works perfectly in a number of upcoming recipes I’m going to share. Read the rest of this entry »
